Hotel Greystone is a beautifully restored Art Deco gem in the heart of Miami Beach, originally designed by the legendary architect Henry Hohauser. Revived by Salt Hotels and designer Holly Muhl, the hotel blends its historic charm with a clean, modern aesthetic. 

As an Art Deco landmark, this boutique hotel has a distinct identity—artful design, locally inspired decor, and a curated ambiance that feels more exclusive and less corporate. With only 91 guest rooms across two buildings, it’s a smaller property. That means fewer guests and a quieter, more relaxed stay. 

Because of its prime location on Collins Avenue in South Beach, the Greystone’s close to top dining and shopping spots, including KITH, which is right across the street.  Dog-friendly, the hotel is just a short walk away to the nine-mile long Beach Walk, an ocean boardwalk alongside Miami’s beaches –including a dog beach.  The nearby Bass museum in Collins Park is perfect for contemporary art lovers as well as for pup walks.

CHEF PAWAN PINISETTI 

Chef Pawan Pinisetti, originally from India, has over 18 years of experience in the restaurant industry and is now based in the United States. A graduate of the Culinary Institute of America, he trained under legendary chefs Joel Robuchon and Michael Mina at the MGM Grand, later working with Tom Colicchio at Craftsteak, where he honed his passion for high-quality ingredients and classic technique. He went on to lead major banquet operations, oversee food and beverage strategy for MGM Resorts, and elevate Las Vegas’ Top of the World Restaurant to national acclaim. 

Now in South Florida, Chef Pinisetti leads Food & Beverage Development at Greystone Miami Beach, where his culinary philosophy blends Japanese ingredients with French technique, emphasizing fresh, local ingredients and refined simplicity. His signature restaurant, Sérêvène, features elevated yet relaxed dining with tableside experiences, inventive cocktails, and a standout wine program.

SÉRÊVÈNE BY CHEF PAWAN PINISETTI

Tucked away in the back of the lobby you will find the hotel’s signature restaurant, Sérêvène by Chef Pawan Pinisetti. Guests are seated in plush stormy grey banquettes and muted rose pink dining chairs surrounded by palm plants and under woven chandeliers. 

Sérêvène weaves French traditional cuisine with Japanese izakaya-style dining. Izakaya-style dining refers to a Japanese-style pub experience where people gather to drink and eat small, shared dishes, similar to a tapas bar.

An excellent starter is the Ōra King Sashimi, dressed with caviar, pickled wasabi, and soy balsamic. Ōra King a unique and highly regarded breed of salmon raised in New Zealand, and known for its rich flavor, buttery texture, and high oil content.

Under the menu’s Izakaya section, find the Foie Gras & Donettes -a rich and syrupy sharable plate of mini French toasts topped with Hudson Valley foie gras and cherries in a Bordeaux wine reduction.

Pair it with the suggested Château Roumieu  Sauternes –a sweet and rich French dessert-style wine with peach, mango and pineapple flavors and hints of chamomile tea and dried herbs.

For mains, Lobster Uni Alfredo –butter poached lobster and bucatini al dente pasta, topped with a parmesan crust and caviar, is a light dish with big flavors. 

While typically paired with a Sancerre, a white French Sauvignon Blanc, I was excited to find Gérard Bertrand Orange Gold, which pairs similarly like a rosé, by the glass on the menu. This South of France-produced orange wine is blended seven grape varietals, including Chardonnay, Grenache Blanc and Viognier. Beyond its distinctive golden-orange color, it has a unique flavor profile, characterized by notes of apricot, peach, citrus zest, and ginger.

For a heartier entree, we recommend the Quack Quack – tender duck breast medallions served with a maple-peppercorn reduction, which is perfectly matched with a French Merlot Cabernet blend from Chateau St. Andre Corbin. This intensely purple-colored French wine has blackberry and blueberry flavors and savory hints of dried thyme that balances nicely with the sweetness of the dish.

Finish with your evening decadent Foie Gras Crème Brûlée  -topped with crème Anglaise, fresh berries and aged balsamic; and served torched tableside. Or, perhaps the Ferrero Rocher, a dessert cocktail layered with Glenlivet 12 year-old scotch, Frangelico, Trader Vic’s white chocolate liqueur, cream, and maple –delish!

GREYSTONE BAR

Step into the dark and sultry Greystone Bar, where the cozy cheetah-print sofas and live jazz create a sexy vibe. Stay for the expertly crafted cocktails, such as the rich and boozy S’il Vous Plaît stirred with Botanist Gin, Amaro Montenegro, Lillet Blanc. 

The professional bartenders are also ready to mix a classic drink –including the rum-based mojito or daiquiri. Pair with a bite from the ‘Comfort Food’ menu. 

Our top recommendation is the juicy Smash Burger dressed with melted cheese, shredded lettuce, caramelized onions, pickles and ‘Crack Sauce’. Don’t forget to add waffle fries served with BBQ & Ranch dipping sauces. For something lighter, go for the Roasted Garlic Hummus served with pita and raw veggies.

SORA ROOFTOP BAR

Sora Rooftop Bar at Hotel Greystone offers a quintessential Miami poolside experience with stunning views, frozen cocktails like the Banana Hammock and Kyoto Lemonade, plus light bites by day and comfort food favorites like tacos and their famous smash burger by night.

At Kobo, guests and locals gather in the shady main courtyard to enjoy fresh smoothies, juices, pastries, and protein-packed bowls—perfect for a quick bite, beach cooler pickup, or an afternoon energy boost.

Hotel Greystone continues its relaxing vibe in their minimalist-style guestrooms, suites, and penthouse suites, with some featuring private terraces, hot tubs, and stunning views.  Simple furnishings, monochromatic palettes, and an absence of clutter create a serene atmosphere within the vibrant energy of South Beach.  Subtle blues and greens throughout the interiors reflect the natural beauty of Miami—its beaches, ocean, and lush foliage.

You can also walk, jog, skate or bike on Beach Walk, a near nine-mile ocean promenade running the length of Miami Beach.
